Warmer weather has many New England restaurant owners finally seeing some relief, as the ability to dine al fresco creates a safer environment for guests and employees. After five months of closure due to COVID-19, Cambridge, MA hotspot Miracle of Science Bar + Grill reopened its doors in April 2021. Chris Lutes, the owner of both Miracle of Science and Horse Thieves Tavern in Dedham, MA, had to navigate building community confidence to re-open the Cambridge restaurant.

While his Dedham location continued to welcome guests throughout the last year, the city of Cambridge saw a sharp drop in patronage across all of its restaurants - making restoring guest confidence in “dining out” especially challenging. The vastly different community perceptions of COVID risks among residents of nearby areas has been stark.

Before welcoming back guests, the staff and leadership at Miracle of Science executed a weeks-long sanitation and infrastructure update process that included extra staff training and the implementation of new technologies to provide guests with the cleanest and most enjoyable experience possible. One of these updates included the introduction of Celios G200 Advanced Air Purifiers, which have been placed throughout the restaurant.
